Black Salt
Traditional Black Salt of Huehuetenango (Atz’am)
Origin & Production: Produced in San Mateo Ixtatán, Huehuetenango (Cuchumatanes Mountains), from inland saltwater wells (Sjaj). This sacred tradition is passed down through generations and led almost exclusively by Maya Chuj women.
Artisanal Process: Salty groundwater is extracted and boiled in clay or metal pots over firewood for 12+ hours. As it evaporates, the salt absorbs local minerals and smoke, turning dark greyish-black with a subtle smoky, sulfurous flavor. It is then pressed into solid salt blocks (pilones).
Historical & Cultural Context:
Pre-Hispanic Trade: Used since pre-Columbian times, these high-altitude salt springs made San Mateo Ixtatán a vital regional trade hub far from the coast.
Cosmovision: In Chuj belief, salt possesses a female guardian spirit (Atz’am), making its harvesting a sacred craft reserved for women.
Cultural Resilience: It remains a pillar of Maya Chuj identity, highly valued in traditional medicine and local gastronomy (ideal for seasoning acid fruits, stews, and beans).
